BOK CHOY COLESLAW

4 C. thinly sliced bok choy

1 grated carrot (a big one)

1 1/2 cups of snow peas

~~~~~~~~

2 tlb. rice vinegar

2tlb vegetable oil

1 tablespoon of soy sauce

2 or 3 tsp of fresh ginger (fresh)

! tlb of sesame oil

1 tsp sugar

 

                                      

Slice bok choy into thin slices

Grate the carrot

Slice the snow peas in lengthwise slices.

Mix the above ingredients with the  ingredients.

Salt and remaining pepper to taste.

Coleslaw is generally best if allowed to set for an hour or more.

Serves 4

Try snacking on bok choy like celery

Bok Choy is also known as Chinese Cabbage

Excellent in stir fry's and soups

Keep in refrigerator crisper

 Light, sweet flavor, crisp texture and nutritional value.

Not only is bok choy high in Vitamin A, Vitamin C and calcium, but it is low in calories.


Also Known As: Pak Choi, Peking Cabbage, White Cabbage

 

Bok Choy Chicken Salad

5 cups of chopped bok choy

2 T dark sesame oil

1 T peanut oil

1/3 cup rice wine vinegar

2 t. sugar

1 lb of cooked shredded chicken

1 large carrot

4 T of chopped cilantro

4 sliced scallions

1/3 cup chopped  roasted peanuts

 

 

Combine the oils, sugar and vinegar.

In large bowl toss bok choy, chicken, grated carrot, scallions peanuts and cilantro.

Pour oils and vinegar mixture over salad and toss.
